I did it!


I did it. I made it through canning season. I didn't realize that it took that much work and alot of Sugar, Jars, lids and rings.
This is what my counter looked like for weeks. Jars, lids, bowls of fruit and veggies. They were everywhere.




I started out with Apricot Jam. Here I a so happy and excited to try something new. Little did I know it was a long process. I stood on my feet hours, for days and weeks on end and woke up with swollen feet. And this is what I looked like at the end of canning season. Not pretty. ;)











Here are the nectarines that we picked. We had 5 boxes. It took forever for me to use them up.
Here are some pictures of some of the things that I was able to do.

Jam:Apricot Pineapple Jam: 10 pints
Peach Jam: 9 pints, 1 ( 1/2 Pint)
Apple Cinn. Jam: 19 pints
Nectarine Jam: 5 pints
Pear Jam: 5 pints, 3 ( 1/2 pints)
Plum Jam: 6 pints, 3 (1/2 pints)



Juice:
* Mom helped me alot with the juice making. It's not easy and it takes forever to make it. When I did the apple juice I had to boil the apples and hand squeeze the juice out.
Grape Juice: 17 Quarts
White Grape Juice: 9 Pints
Apple Juice: 6 Quarts
Nectarine Juice: 19 Quarts








I also bottled:
Peaches : 20 Quarts / 23 Pints
Pears: 36 Pints / 1 (1/2 Pint)
Chili Base: 29 Pints / 2 (1/2 Pints)
Apple Pie Filling: 15 Pints / 15 Quarts
1 (1/2 pint)
Pickles: 7 Quarts - and neither Dan nor I like
pickles - I did them just to try them.
Stewed Tomatoes: 8 Pints
Cinn Apples: 7 Quarts/ 9 Pints
Applesauce: 17 Quarts / 14 pints/ 4 (1/2 pints)
Salsa: 8 Pints / 7 Quarts
As for the food that I froze:
Corn: 11 pint bags
Pizza Sauce: 5 pint bags
Peaches: 3 pint bags
Bananas: 3 pint bags
Grapes: 3 pint bags
Shredded Zucc:1 Quart and 2 Pint bags
Zucc. Bread: 16 Loaves
Apple Suprise Filling: 4 Quart bags
Ketchup: 3 Quarts
Zucc Slices: 5 pint bags
And of course dried food:
Apricot Leather, Apple leather, Pear, Peach, Leather, Nectarine Leather, Apple slices, and dried Nectarines and batwings.
Anyway it was fun. And now we have our food storage. ;) Thanks for all those who helped me get bottles and the fruit.

I'm so jealous I want to cry! I've been wanting to do canning, but I don't have a mom, grandma, or neighbors nearby with lots of fruits and vegetables to share AND my garden didn't do so well. I got 10 small deformed cucumbers, 3 yellow squash, and several small bowls full of grape tomatoes. Virginia has such lovely clay soil and with too much rain this summer most of my plants just shriveled up and died. (My basil and rosemary did great though!) I guess it's all right though, I don't have any place in my house to store 335 bottles. (I counted--you have 335 quarts, pints, and 1/2pint bottles full of yummy food in your house.) That's called being prepared!

You're so domestic! I love it! I don't know the first thing about canning...how about I come shop in your pantry =)
